Christmas Raspberry & White Chocolate Cake

Bring a little Christmas magic into your kitchen with this beautifully simple Raspberry & White Chocolate Cake. Dotted with tangy raspberry pieces and finished with a snowy drizzle of white chocolate, it’s the perfect bake for cosy winter days. Topped with our Christmas Sugar Strands for a festive sparkle, this cake is quick to make, gorgeous to serve, and guaranteed to disappear fast! 🎄✨

Ingredients

  • 200 g caster sugar
  • 200 g unsalted butter softened
  • 3 large eggs
  • 1 tsp Madagascan Vanilla Extract
  • 200 g self-raising flour
  • 2 –3 tbsp milk if needed
  • 1 cup Honeyberry freeze-dried raspberry pieces
  • 120 g white chocolate melted
  • Christmas Sugar Strands as much as you like!

Instructions

  • Preheat the oven to 180°C (fan 160°C). Line an 8-inch square tin or loaf tin with baking paper.
  • In a large bowl, cream together the butter and caster sugar until pale and fluffy.
  • Beat in the eggs one at a time, then mix in the Honeyberry Madagascan Vanilla Extract.
  • Fold in the self-raising flour until just combined.
  • If the batter feels thick, add 1–2 tbsp milk.
  • Gently fold in 1 cup of freeze-dried raspberry pieces.
  • Pour the batter into the prepared tin and level the top.
  • Bake for 30–40 minutes, or until golden and a skewer inserted into the centre comes out clean.
  • Allow the cake to cool completely in the tin.
  • Once cool, drizzle generously with melted white chocolate.
  • Sprinkle over Honeyberry Christmas Sugar Strands before the chocolate sets.
  • Cut into bars or squares and enjoy a festive, fruity, bakery-style treat! 🎄✨
