Strawberry and White Chocolate Cookie Bars

These soft and chewy cookie bars are packed with creamy white chocolate and bursts of real strawberry flavour. Made with Honeyberry’s freeze dried strawberry pieces, they’re perfect for sharing, gifting, or keeping all to yourself!

Ingredients

  • 1 cup caster sugar
  • 1 cup unsalted butter, melted
  • 1 tbsp Madagascan vanilla extract
  • 2 cups plain flour
  • 1 tsp baking powder
  • 100 g Pinch of salt
  • 50 g Honeyberry Freeze Dried Strawberry Pieces (+ extra for topping)
  • 1 egg
  • Melted white chocolate, for drizzling (optional)

Instructions

  • Preheat oven to 160°C (fan) and line a baking tray or square tin with parchment paper.
  • In a large bowl, mix together the caster sugar, melted butter, and vanilla extract.
  • Stir in the flour, baking powder, and salt until just combined.
  • Add the white chocolate chunks and freeze dried strawberry pieces.
  • Fold in the egg until the mixture comes together into a soft dough.
  • Press the dough into the prepared tin (or roll into cookie balls if preferred)
  • Bake for 15–20 minutes, until lightly golden at the edges.
  • Allow to cool completely. Trim the edges if desired, then drizzle with melted white chocolate and a sprinkle of freeze dried strawberry pieces.
  • Slice into bars and enjoy!
