Coconut & Dragon Fruit Bars
Ingredients
- 50 g Freeze Dried Dragon Fruit Pieces
- 100 g desiccated coconut
- 4-5 tbsp honey or maple syrup
- ½ tsp sea salt
- 100 g milk chocolate melted (for topping)
Instructions
- Add the dragon fruit pieces, desiccated coconut, honey, and sea salt to a high-powered blender or food processor.
- Blend until the mixture comes together. It may look crumbly, but it should press together when squeezed.
- Transfer the mixture into a small lined container.
- Press down firmly with a spatula until tightly compact.
- Place in the fridge for 30 minutes (or freezer for 5–10 minutes) to firm up.
- Remove from the container and slice into bars.
- Drizzle with melted milk chocolate.
- Allow the chocolate to set before serving.
- Store in an airtight container in the fridge for up to 1 week.
