Ice Cream Dot Cake

Inspired by the viral Dot Cake trend, this fun and colourful dessert couldn't be easier to make. Layers of creamy ice cream, fluffy cake, and fruity freeze dried pieces are packed into a pot, then finished with a vibrant coating of rainbow nonpareils for the ultimate playful treat.

Ingredients

  • 250 g ice cream of your choice we used vanilla
  • 2 tbsp Freeze Dried Pineapple Tidbits
  • 2 tbsp Freeze Dried Raspberry Pieces
  • 1 slice sponge cake cut into small cubes
  • 3–4 tbsp Rainbow Nonpareils

Instructions

  • Spoon a layer of ice cream into the bottom of a small pot, ramekin, or dessert mould.
  • Sprinkle over some freeze dried pineapple tidbits and raspberry pieces.
  • Add a layer of cake cubes.
  • Continue layering ice cream, fruit, and cake until your pot is almost full.
  • Finish with a final layer of ice cream on top.
  • Use the back of a spoon to smooth the top of the ice cream so it's nice and even.
  • Scatter the rainbow nonpareils onto a small plate.
  • Carefully turn the pot upside down onto the sprinkles and gently press so they stick to the ice cream.
  • Carefully lift away the pot and admire your colourful dot cake before digging in!
