What to Bake on a Rainy Autumn Afternoon

There’s something about a rainy autumn afternoon that makes staying in feel like the right choice.

The kettle goes on, the blankets come out, and suddenly the kitchen feels like the perfect place to be. And if there’s something baking in the oven, even better.f

You don’t need a complicated recipe or a long list of ingredients to make the most of a cosy afternoon at home. Sometimes, the best bakes are the simple ones. Recipes you can mix together without too much fuss and enjoy while they’re still warm.

So, if the rain is tapping against the windows and you’re wondering what to bake, here are a few of our favourite ideas.

A Classic Loaf Cake

Few things are more comforting than a homemade loaf cake.

Whether you go for a simple vanilla sponge, a rich chocolate loaf or something fruity, they’re wonderfully easy to make and perfect for an afternoon cup of tea.

Loaf cakes are also ideal for experimenting with flavour. Add a little natural flavour to your cake batter, then finish with buttercream, icing or a simple drizzle.

Try vanilla with raspberry, chocolate with orange or lemon with blueberry for a fruity twist.

Warm, Spiced Cupcakes

When the weather turns chilly, warming flavours suddenly become much more appealing.

Think cinnamon, gingerbread, caramel, maple or mixed spice. These flavours can turn a simple batch of cupcakes into something that feels instantly autumnal.

A spiced sponge topped with caramel buttercream is a particularly cosy combination, while maple or gingerbread flavour can be a lovely way to give a familiar cupcake recipe a seasonal twist.

And, of course, don’t forget the sprinkles. A scattering of autumnal colours can make even the simplest cupcakes feel a little more special.

Chocolate Brownies

Sometimes, only chocolate will do.
