High-Protein Cherry Ice Cream

Ingredients

  • 1 can Full Fat Coconut Milk
  • 1/4 cup Protein Powder
  • 1 tbsp Vanilla Bean Paste
  • 2 tbsp Powdered Sweetener
  • Freeze Dried Cherry Slices

Instructions

  • Place a loaf tin in the freezer to chill. At the same time, refrigerate your can of full-fat coconut milk for at least 30 minutes, which helps it thicken and blend smoothly.
  • Once chilled, scoop the thickened coconut milk into a blender and blend until smooth and creamy.
  • Add your protein powder, powdered sweetener, and vanilla bean paste. Blend again for 2–3 minutes, or until fully combined and silky.
  • Remove the loaf tin from the freezer and pour in the mixture. Gently stir in your Honeyberry Freeze Dried Cherry Slices. (Freeze dried fruit is ideal here; it adds intense flavour without introducing extra moisture.)
  • Return the tin to the freezer. For the first hour, stir the mixture lightly every 20 minutes to prevent ice crystals from forming.
  • After the first hour, cover the tin with clingfilm and freeze for at least 6 hours, ideally overnight, until fully set.
  • Let the ice cream sit at room temperature for about 5 minutes before scooping and serving.

Indulge without compromise! 💪🍨 - 1 Can of full fat coconut milk 1/4 protein powder. 1 tbsp vanilla bean paste 2 tbsp powdered sweetener. Freeze dried fruit of choice (cherry slices) - Start by popping a loaf tin in the freezer & your full fat coconut milk into the fridge for at least 30 minutes before your begin. In a blender add your chilled coconut milk & blend until creamy. Add in your protein powder, powdered sweetener & vanilla bean paste then blend for a further 2/3 minutes. Remove your loaf tin from the freezer and pour your mixture in & stir through your freeze dried cherry slices (Freeze dried fruit works great in the recipe as there is no access liquid being added to the recipe). Pop back into the freezer and lightly stir every 20 minutes for the first hour the stop the ice cream getting icy. Then cover with clingfilm & freeze ideally overnight.
