Raspberry & Lemon Bagels

Soft on the inside with a lightly golden crust, these Raspberry & Lemon Bagels are quick, easy, and made with just a handful of ingredients. The tangy yoghurt dough is lifted with bright lemon flavour and bursts of real raspberry, perfect for breakfast, brunch, or a lighter bake.

Ingredients

  • 200 g self-raising flour
  • 200 g Greek yoghurt
  • 3 tbsp Freeze Dried Raspberry Pieces
  • 1 tsp Lemon Extract
  • 1 egg beaten

Instructions

  • Add the flour and yoghurt to a bowl and mix until a rough dough forms.
  • Stir in the freeze-dried raspberry pieces and lemon extract.
  • Turn the dough out onto a lightly floured surface and knead briefly until smooth.
  • Divide into 4 equal pieces.
  • Roll each piece into a ball, then poke a hole through the centre and gently stretch to form a bagel shape.
  • Brush the egg onto the top of the bagels.
  • Preheat the oven to 190°C (fan 170°C) and line a baking tray with parchment paper.
  • Place the bagels onto the tray, spacing them apart.
  • Bake for 20–25 minutes, or until risen and lightly golden.
  • Allow to cool before serving.
