Raspberry & Lemon Bagels
Soft on the inside with a lightly golden crust, these Raspberry & Lemon Bagels are quick, easy, and made with just a handful of ingredients. The tangy yoghurt dough is lifted with bright lemon flavour and bursts of real raspberry, perfect for breakfast, brunch, or a lighter bake.
Ingredients
- 200 g self-raising flour
- 200 g Greek yoghurt
- 3 tbsp Freeze Dried Raspberry Pieces
- 1 tsp Lemon Extract
- 1 egg beaten
Instructions
- Add the flour and yoghurt to a bowl and mix until a rough dough forms.
- Stir in the freeze-dried raspberry pieces and lemon extract.
- Turn the dough out onto a lightly floured surface and knead briefly until smooth.
- Divide into 4 equal pieces.
- Roll each piece into a ball, then poke a hole through the centre and gently stretch to form a bagel shape.
- Brush the egg onto the top of the bagels.
- Preheat the oven to 190°C (fan 170°C) and line a baking tray with parchment paper.
- Place the bagels onto the tray, spacing them apart.
- Bake for 20–25 minutes, or until risen and lightly golden.
- Allow to cool before serving.
