Tropical Mango & Lime Tarts
Ingredients
- 2 tbsp Birds Custard Powder
- 500 ml milk (or as per custard packet instructions)
- 1 tsp sugar
- 1 tsp Madagascan Vanilla Extract
- 1 tbsp Lime Extract
- 2 tbsp Freeze Dried Mango Powder (split use)
- Freeze Dried Mango Pieces, to decorate
- Pre-baked pastry cases (about 6–8 small ones)
Instructions
- In a saucepan, mix the custard powder, sugar, and a splash of milk to form a smooth paste. Gradually whisk in the remaining milk.
- Heat gently, stirring continuously, until the custard thickens. Stir in 1 tablespoon of Freeze Dried Mango Powder.
- Microwave for 30 seconds if needed to smooth out, then stir in the Lime Extract, Vanilla Extract, and the second tablespoon of Mango Powder for extra fruity flavour.
- Spoon the custard mixture into the pre-baked pastry cases, smoothing the tops.
- Allow to cool slightly, then sprinkle with Freeze Dried Mango Pieces. Serve warm or chilled.
