Summer Berries Chocolate Cheesecake (No Bake)

Rich, creamy, and bursting with fruity flavour, this Summer Berries Chocolate Cheesecake is the perfect no-bake dessert for warm days. With a chocolatey biscuit base and a light, berry-studded filling, it’s simple to make and even easier to love.

Ingredients

  • 200 g bourbon biscuits
  • 75 g unsalted butter, melted
  • 300 g cream cheese
  • 75 g icing sugar
  • 1 tsp Honeyberry Vanilla Extract
  • 150 ml double cream
  • 2 tbsp Honeyberry Freeze Dried Summer Fruit Mix

Instructions

  • Place the bourbon biscuits in a ziplock bag and crush with a rolling pin until fine.
  • Melt the butter in the microwave, then mix with the crushed biscuits until fully combined.
  • Press the mixture firmly into the base of a cake tin or individual serving glasses using the back of a spoon. Chill in the fridge while you prepare the filling.
  • In a mixing bowl, combine cream cheese, icing sugar, and Honeyberry Vanilla Extract. Beat until smooth. Add the double cream and whisk until the mixture thickens and holds its shape.
  • Fold in the Honeyberry Freeze Dried Summer Fruit Mix, distributing evenly through the cheesecake filling.
  • Spoon the cheesecake mixture over the chilled biscuit base and smooth the top with a spatula.
  • Refrigerate for at least 4 hours (or overnight) until set. Just before serving, sprinkle extra freeze dried summer berries on top for a vibrant, fruity finish.
