Add the oats, soaked dates, and desiccated coconut to a food processor. Blitz until the mixture starts to clump together.
Transfer the mixture to a bowl and stir in the freeze dried pineapple tidbits and passion fruit powder.
Add the honey and mix until everything is evenly combined.
With slightly damp hands, roll the mixture into small bite-sized balls (about 1 tbsp each). Optional: roll in extra desiccated coconut for a finishing touch.
Place the energy balls on a tray or plate and chill in the fridge for at least 30 minutes to firm up.
Store in an airtight container in the fridge for up to 5 days.
