Tropical Pineapple & Coconut Energy Balls

These no-bake energy balls are sweet, chewy, and bursting with tropical flavour, the perfect healthy snack to keep you going throughout the day. The combination of pineapple, coconut, and passion fruit gives each bite a sunny, exotic twist.

Ingredients

  • 150 g rolled oats
  • 100 g pitted dates (soaked in hot water for 10 minutes, then drained)
  • 50 g desiccated coconut (plus extra for rolling)
  • 30 g Freeze Dried Pineapple Tidbits (finely chopped)
  • 1 tbsp Freeze Dried Passion Fruit Powder
  • 2 tbsp honey (or maple syrup for vegan)

Instructions

  • Add the oats, soaked dates, and desiccated coconut to a food processor. Blitz until the mixture starts to clump together.
  • Transfer the mixture to a bowl and stir in the freeze dried pineapple tidbits and passion fruit powder.
  • Add the honey and mix until everything is evenly combined.
  • With slightly damp hands, roll the mixture into small bite-sized balls (about 1 tbsp each). Optional: roll in extra desiccated coconut for a finishing touch.
  • Place the energy balls on a tray or plate and chill in the fridge for at least 30 minutes to firm up.
  • Store in an airtight container in the fridge for up to 5 days.
